    Those look great, plenty of meat. Excellent! I can't find good Dino ribs at a regular grocery store around here. If I do find some they look like vultures picked them clean already. For others searching, I have real good luck buying at the farmers market. Just costs a bit more.

    Thanks, give it a try and see. Hot heavy smoke about 350° until you get great color, then in for the braise. I found it ultimately less work than searing, the flavor and color was outstanding.

    It has performed well for the church so far. Really no complaints. I can see doing a little indirect in it, normally for church it's something quick, burgers and dogs so far. I could never pull off the same volume on a 22" kettle like I have at home.
