Hey folks, after a couple weeks of debating, I ended up going with a Bandera. Got a great deal at my local ACE and I’m loving the vertical setup. Going to use this a while and work my way up to an LSG/meadow creek.

I believe the DLX Brazos comes with some tuning plates, but if it doesn’t, I’ll definitely be getting one for it - I’ve seen before that some guys will use the bottom firebox grate as a tuning plate- I thought that was kinda clever!

Ive spent nearly my entire life here in south jersey, and it really is a nice area! Lots of forests, lakes...I think a lot of people would be surprised!
not sure if this has been mentioned already, but with larger cuts of meat that go 8+ hours, it really pays off to wrap it about halfway through the cook(I like to wrap it up when it hits the stall, bout 160ish internal).
Maple is a mild smoke, but You can also experiment with some fruitwoods...
Heres some pics! Texas crutch’d at 160 internal temp...once they hit 190 I like to unwrap em, dust with fresh rub and expose to smoke til 205 internal. Successful Sunday session 👍👍
