    Reheating

I'm trying to figure out how to do this, as reheating for 3-4 hours in a bath is not practical prior to the sear. We like our meals out to our customers with-in a 30 minute time frame, maybe a little...

Having trouble stuffing through your 3/8" or 10mm Snack stix tube?

My wife has been having a heck of a time turning the crank on our stuffer when we fill snack stix through our 10mm tube into our 21mm collagen casings. Turns out that the 21mm casings will slide onto the 1/2" tube if you unravel them. This works well for us as we can measure out and cut...

    Mexican Sea Salt troubles

Thought I should come back and let you all know what I found.... turns out the pork I purchased here in Mexico is pumped. I dropped my % to .4 instead of the usual 1.7% and all is fine. Had nothing to do with the salt, all to do with the pork. 'ALWAYS READ THE LABEL !!!

    Mexican Sea Salt troubles

Been playing with sausage recipes here in Mexico (snow bird) Hard to find different grades of salt in the area I am in. Most readily available is coarse sea salt. I do weigh my ingredients and I was under the assumption that when going by weight, the saltiness will be equal. Not with this...

MES 30" vs 40" - cast your vote!

Thanks for the reply Bear, Another question would be how many 8# butts could a person do in the SS 1200w MES40? I could do 6 in my old Broil Master Vertical propane unit with out any issues. Could the 40mes handle 6 or 8, or would the unit not be able to get up to temp properly? I now see...

Oh heck..if a new 40 is about to be released in June, I am better off to hang tuff until then... Not a problem as Basspro is out until mid May anyway. I have purchased the 8x5 Amaz'n unit, just awaiting delivery. I was curious if it was possible to use sawdust in the MES unit itself, or is that...

Thanks for the reply daRicksta, The bluetooth option means nothing to me... could care less. I do like the fact that the unit is larger and has the probe. I am a chef and have a restaurant at a golf club, so it will be used often and it being reliable is important. I searched Amazon.ca and...
