    I think boiling was mentioned because that's a traditional way of cooking corned beef. Since the prepackaged corned beef is brined assuming a boil, you have to remove some of the salt if smoking instead.

    Go ahead and cook it, if you're feeling up to it, and freeze what you can't eat. It'll still be good. But if you're feeling bad, just chuck it or give to a neighbor for them to cook. Don't risk making yourself sicker.

    Tri Tip on the Santa Maria

    Tri tip from homegrown Dexter steer. Dry brined overnight, then dusted with cracked pepper and garlic powder. Cooked over red oak at about 5-7 hand seconds, turning every few minutes. Mighty fine indeed. Thanks for looking.

    Another Great Beef Belly Bacon Experiment!

    Yea! Homemade beef bacon! You got a pic after frying up some slices? I did my first batch a few months ago and sliced by hand, so maybe a little thicker than your's. I had to fry slowly to render the fat, otherwise a little chewy. Flavor was much different from pork.
