It turned out pretty well! I ended up going 2 TBSP of pepper and salt with about 1 tsp of garlic and onion. I went with 250 degrees on the smoker. At about 6 hours in I wrapped it in butcher paper when it was at about 165 degrees. At about 8.5 hours in I decided to crank it to about 295 degrees...
I've not done brisket before, so I'd appreciate some specific advice on the following brisket. It appears to be a point due to the widened section. It weighs 6.5 lbs frozen. (I assume in the fridge, that this thing will be ready to smoke in 3 days)
My plan - smoke at 250 degrees (SPOG) until...
Grilling - weber spirit E-310.
smoking - tbd in about a month - either a rec tec 340, grilla grills chimp, or splurging on the new weber smokefire (depending on initial reviews)

Thanks for all the input on this. The advice feels sound. For my first pellet smoker, early adoption of something with a less known company (no warranty?) likely isn't the route to go.
I'll still wait about a month or two to see what people think of the new Weber pellet smoker.
That's what I'm figuring as well; however, it's about half the price. So I was thinking that I don't mind slight inefficiencies with burn rate of pellets but that's only if one side of the grill isn't way hotter than another side - that would bother me too much.
