First smoke of beef chuck roast

I would blame the oven. Nextime use your Weber kettle and yeah needs to rest a bit too. I tell my family all the time that they just have to wait a little longer or make a ham and cheese sandwich :)

    First build/80 gallon RF

I’m not a pit builder, however I’ve been around a long time and have seen a lot of designs. I think your okay with your design. The only thing I would add is an extra exhaust on top of your warmer. Just to be able to have that Extra flow if you need it. I’m assuming you will be able to open and...

    UDS tips and unique ideas

This valve should always remain open with the adjustments on the two uprights. It also helps if it’s as close to the height of the coals in your basket, not underneath...

    UDS tips and unique ideas

Curious about your temp problem. I have a few questions if I may ask? What size are your ball valves? Where is the third valve? Can’t tell in you pic but I’m assuming is down low in front. Where are the vents in relation to the firebox?

    BARREL/DRUM SMOKER

Build yourself a UDS you can design it the way you want on your budget. I spent about $200 to build mine and I’m starting another one. My charcoal basket is 12”X12”X12” almost filled with B&B lump mixed with wood chunks, I got a sixteen hour smoke at 250. I shut it down and the next day I went...
