My Better Half (blesshersweetheart) decided to give me a break this year and ordered a pre-smoked (cooked) Prime Rib online (from a reputable purveyor; we’ve been very happy with the meats we’ve ordered in the past).
I followed the reheat instructions to the letter (no additional seasoning...
For me a small footprint is vital. Our chamber vac lives on our all-too-precious countertop real estate where it gets used daily. Probably wouldn’t use near as much if I had to drag it out.
Ours is the MYM oilless, no complaints, replaced our FS simply bc the chamber lives on the counter; FS is...
Since my previous post, I've ‘converted’ to RFX & Gateway (there’s plenty posts covering them), never looked back. Meater2+ and its annoying app have been relegated to the Round pile. The ThermoWorks RFX app is not ideal but far better than the Meater.
As I see it, it’s a two-step habit. I use the old wire bristle number for cleaning while the grill is still hot (ok, when I’m not rushed). I’ll give it a quick hit while the grill is heating, but then right before the food goes down I’ll swab the deck with oiled paper towel or onion in bbq tongs.
Love my TimeStickTrio!
And for those of us memory-challenged (who, wondering what the he77 the beeping is coz I can’t remember 45 minutes ago) the TimeStack!
Very well said, and I’ve changed my position. Anything we can do to encourage folks to try our obsession should be supported.
I’d like to break down what this ‘kit’ provides:
1. Provide a trimmed, ready-to-cook product.
2. Seasoning.
3. Instructions.
Are these ‘services’ worth it? Let’s examine...
I would say it depends on what you’re going for. If you’re looking for classic Texas, butcher paper is traditional. Just spritz the paper well, optionally add a splat of tallow and wrap very tight. I’ve also had great results with foil boats on the drum. Just be cautious what if anything you add...
Similar sun here in Texas. I’ve resigned myself to treating covers as ‘consumables’; I change out covers every year or two. I usually buy generic covers (such as Char-Broil) from big box when I can catch a deal. I figure it’s cheap insurance for a $$$$ smoker or grill.
Welcome!
I haven’t used your rig in a dogs age but it CAN be done! First off, skip the soaking; wood is what they make boats from, all you’re doing is creating steam (that’s what water pans are for. More on that later). That’s likely the “white smoke” you experienced. Also, I’d recommend small...
Don’t sleep on a pinch of celery seed. My go-to POG adds a 1/2 part celery seed. I salt separately, a 50-50 mix coarse kosher and Lowerys Seasoned. Works on most everything!
Tried Meater2+, hate the app, blootooth. Use RFX for 1)Rotis, 2)SV, 3)Frying and frankly lots of other times as well. Absolutely satisfied. Range is absolutely unbelievable, last nite I did steak & spud: Gateway on patio door, RFX1 in steak in 10ga Yoder across the yard (some 60’) and RFX2 in...
Welcome kindred spirit from Texas! I retired from s/w development and also have a technical background and now have an armada like yourself.
I’ve often been accused of over-analyzing. I love to tinker and my UDS has been a wonderful testbed.
I rely on a ThermoWorks TimestickTrio, works...
It goes without saying, be sure to use a salt-free steak seasoning before cooking (avoid double-salting).
I’m a bit salt-averse (health) so I do a post dry-brine quick rinse, pat dry, salt-free seasoning right before cooking and coarse flake sea salt after plating. I get the seasoning bang...
