    Yoder 480s info

Totally agree! Mostly, it’s just for two of us, but every once in a while (like this weekend!) when I’m cooking for a crowd, its nice to have the room. btw, we have Pizza Nite most fridays and that SS WFO is a machine! Only place in our ‘hood that can come close is nearby golf course: But...

Newby : Looking @ possible smoker options ?

Don’t forget the DIY option. Built a drum a few years ago and it works really well. I have a pellet smoker (YS640S) which is convenient for week nite or lazy weekends, but nothing beats the flavor of a UDS! Plus the pride element, and you can’t argue about the price tag. Just a thought.

First time smoking baby back ribs...

After wrapping, give them about 30 minutes cook and then peek. You’ll need to open the top foil a bit to accurately probe. Close the wrap and continue checking every 15 minutes. Once you hit 195F or so, start looking for your doneness cues (bend, pullback, probe tender, etc), should be around...

First time smoking baby back ribs...

Not near hot enough, imo. Connective tissue needs to be 195-205F (or, depending on the animal, sometimes even higher) to break down and become juicy. It’s tricky to temp ribs, I use a needle probe on a Dot or ChefAlarm. Some other tips for moist & juicy spares: 1. Start with good quality, well...

First time smoking baby back ribs...

Sure you’ll get plenty, here’s my $0.02: Your prep sounds great! I usually smoke to color, your 60min @ 225F is fine. Sometimes I’ll spritz with pineapple juice & apple cider vinegar once or twice. If I wrap, I’ll kick the pit to 275-300F to shorten the cook. In the wrap, I’ll dump in a small...

I like your creativity, not sure I’m on board with the galvanized cooker tho.

How Do You Afford This Addiction?

I relate. Worked in spook biz for 9 years, waking up in all sorts of countries, too many clearances. Took me the better part of 3 years to ‘get out’; every interview was same: who was your employer and what did you do? Ahem.

    RFX Range FWIW

Jason, as you might know a Gateway is required for RFX probes; We bought the ‘starter’ kit (1 RFX probe, 1 Gateway) and added an additional RFX probe on sale. If you are new to the RFX landscape, I’d definitely recommend the Gateway+2 probe kit. You can add as many more probes as needed. The...

    RFX Range FWIW

Decided to have a loaded twice-baked and NY Strip the other weeknight. I wanted to run the potato to 205F and the steak to 125F on the GrillGrates. Stuck one RFX in the tater, one in the Strip and slapped the Gateway on the patio door. From the Strip to the Gateway goes thru 10ga Yoder, some...

Meater+ temp probe vs digital wired temp probes?

ThermoWorks (in their RFX) abandoned the concept of an integrated ambient due to a variety of inaccuracies and 50F seems like a big inaccuracy.

Any "foil boat" captains out there?

Something aesthetic about foil boat; I just like the aerodynamics as opposed to the ‘cybertruck’ brick of a pan. I do think the foil holds the brisket shape better. I think an argument can be made for better conductive heat transfer thru a thin foil - thin liquid layer vs a convective liquid...

How you know when you're officially OLD.

Tired, wasn’t paying attention, turned ankle and fell on the concrete outside Krogers. Not that falling is a big deal, I’m good at it and fall regularly. Luckily, I learned to fall properly as a lad and it’s all automatic. But boy, that ’crete is hard. Sore for a week. Worst part was when this...

    Thermoworks RFX First Impressions

Glad to hear Billows works as I haven’t tried that yet, although I shouldn’t be surprised; works very well on my Signals. I just might have to add to my Top Reasons To Use RFX (rotisserie, frying, SV): UDS! It will be nice not to need to pop the lid so often to check temps!

    Thermoworks RFX First Impressions

Note to ThermoWorks: If ever you decide to include “some enhancements to their application for preconfigured cooks, etc.“, PLEEEASE provide a simple way to turn it off. Please, I’m begging you. Do not turn your product into a Meater2+. I have one and it’s a pain to ‘trick’ it into working around...

    Thermoworks RFX First Impressions

For comp guys this is a big deal, which is why I think they’ll make the Gateway ‘dual freq’ soon. The only other option (which I haven’t tried) is to run the Gateway thru a local hotspot. Even so, that would decimate the range, all those other reasons to hate bluetooth.
