    Frozen Brisket

    I've been smoking on a WSM for the past few years and have finally started to get the hang of brisket.  I've always used the prime briskets from Costco which I don't think are ever frozen. I recently discovered a farm/butcher in my area (Mesa, AZ) that's raising no hormones/no antibiotics...
