Are you on the east coast or west? If on the west coast, Traeger pellets are 70% Alder and so are very mild flavored. If you buy the Alder labeled bags they're 100% Alder wood, and if you cant find those then the Apple bags should also be quite mild.

Yes, I have the Grilla OG as they call it. The unique round-shaped one with a gorilla shaped window that you can see the fire and I love it. I also converted an old Traeger to use a Grilla controller because the Grilla had a meat probe, finer temp control and a proper shutdown sequence.

Most of the tailgate sized pellet grills will still fit a brisket, as long as you don't want to put anything else in there like a smoke tube or even a temperature probe. The Grilla Chimp will fit a 22lb (18.5lb trimmed) brisket. I'll attach a picture.

Sorry you weren't getting the help you need. The old controllers don't have an adjustable P setting. If it doesn't have the hole then you can't adjust it.

Also I don't place it on my top rack anymore since it drops ash. My smoker has a hot spot on one side, so I just put the tube there.
