    I use their pitmaster blend for my cheeses. I forget exactly what is mixed in but it has been very well received. I usually smoke about 30 lbs of cheese a month just for family and two friends.

    Don't worry about that, if you cook it they will come. I seen my neighbors for the first time in months the first time I had ribs smoking. It was 20 degrees out and they were hanging on the fence.

    Thanks Al I will definitely have to try that out to make sure. I pulled the turkey @163 going by the Remington and the neighbors were coming over to see what all the oh my godding was about. It was perfect. I don't think I will cook another turkey or chicken without brining again.
