I've had my Wrangler for almost a year. I've done about the same mods. Sealed doors and made 4 tuning plates. My temps hold between 10-15 degrees from one end to the other. Cook with door open and adjust temp with amount of fuel. I love mine!

Here's the current setup. Three tuning plates, the charcoal pan used as a diffuser and a water pan. This gives me temps within 5-10 degrees after about one hour. So by the time my fire is ready and the CB to temp it's pretty even. It still gets hotter on the exhaust end in the beginning but...
Well started the day with a 91/2 pound packer. It looked and felt really great in the cryovac. Was trimmed pretty well before I opened it.
