If you have a stainless steel fry pan of good quality try cooking your scallops in it, you will get a great sear on them.
If you need Thermostat(s) to install in the walls of your smoker I have always used Weber ones that I salvage at my dump. If you don't have that option I have a few hanging out in my shop and would be glad to send you one or two. I have four on my 500 gallon counterflow all salvaged ones.

All in on All Clad. Use mine every day along with cast iron and carbon steel. Clean the All Clad with Bar Keepers Friend and they will look like new. Some of mine are 30 yrs old. I have many cast iron pans all but a few are dump or yard sale finds of Griswold or Wagner brands.
