Hi there! Not new to smoking, but I have gotten way more into it now. I have an MES-30, and at the grill & bar I work at, we turned a huge stainless steel commercial freezer into a smoker too. It's a pretty cool contraption! Glad to be here and learning a lot!- mysstwalker
