    Floating fruit.

    I put up peaches for the first time. Did the hot pack method in sugar syrup. Why did they float to the top of the jar? The jar looks half filled now.

    News Years Day smoke. Boneless Prime Rib Roast.

    Well here it is.Figured we would have beef this year. Started with 3.5 lbs roast. Had trouble keeping smoker temp at 230 in my MBPS. Everything turned out real good.

    First Summer Sausage Logs

    Well here they are.My first try at it. Still have a ways to go.They look good and are edible.But I know I can do better in time.They are beef and pork with the spices from the sausage maker.The temp stall really had me going. Thanks to this site for all the info.

    Stalling Meat Temps

    I'm doing summer sausage for the first time.My meat temp is up to 140 then drops to 136 and stays there. Any suggestions?
