Looking for help smoking my 1st turkey in an mes 30. Wondering if I should brine or inject and what type of rub. Also what temp and about how long per pound.Going to do a 12-15lb bird.

Just wondering if anyone has ever smoked sauerkraut in their smoker. I caught the tail end of qvc and they were featuring masterbuilt smokers. The host was showing some sauerkraut he had smoked. Didn't give the recipe. Would love to try it. Any info would be great.
I did some wings last night in my MES for the 1st time. The taste was outstanding , but I was wondering if there was any way to get the skin crispy in the smoker? I know I could throw them on the grill at the end. Would leaving them in in the smoker longer crisp them or just dry them out? I did...

I am smoking a couple butts on Friday and was wondering if I could slide an aluminum pan on the rack below them to catch the greese. Would this interfere with the smoke or heat. Last time it all flowed into the water pan . Kind of a mess. I am using a masterbuilt electric. It has a drip pan...
I was just wondering if you should reinsert the thermometer back into the pork butt after you foil it to put it back in the smoker?

Yesterday I tried my new masterbuilt electric smoker for the 1st time.
I did 2 whole chickens which I brined over night. I also injected them with chicken broth and rubbed with pepper and a bunch of herbs I had on hand. I put a cut up Apple and some garlic cloves in each one.
