    how well do these jerky driers work?

    http://www.smokintex.com/AccessoriesDryer.html Just a gimmick.  Cant find any instructions on how to use them.  What temperature to set the smoker, etc.  Do they run when you are smoking or just after the smoke for the drying? Help and comments on their value would be appreciated.

    Dumb newb question, but I seem to get conflicting answers googling around. If I cure Jerky meat with either Prague 1 or Tender Quick, can it be stored without refrigeration?.  I have a good vacuum bagger (commercial)  and would use that for preservation, in 8 oz to 1lb bags.  I know the old...
