    5lb chicken first time =problems help!

    Planned on a 5lb chicken taking 6 hours at 200 degrees. Boy was I wrong. Stalled at 147 degrees for 2 hours at the 8 hour mark and it finally broke the stall at ten hours only peeked once and that was at the ten hour mark to put another temp probe in to ensure accuracy. Am I doing something...

    Does anyone wax their cheese to seal it? I am thinking about trying it but don't knowhow or what kind of wax to use.

    " heavy duty" smoke generator build

    Seen a few pics of similar generators but they cost over a hundred bucks! Used scrap steel, a little over an hour to build and 3 bucks in copper and fitting. I hope it works!

    Do I need insulation?

    I am going to be building a smoker with a 2×4 frame and 3/4" tongue and groove pine. Many smokers that I have seen on here don't appear to use any insulation. My neighbor says that If I don't use insulation that it wont work and also if I don't use some type of fire proofing such as a metal...

    Hello from Minnesota!

    Last week I was introduced to smoking had smoked venison and goose and oh was it ever delicious. So now i'm going to try doing it myself and found this great looking forum to help me out. Going to be building a smoker next week sometime hopefully.
