    New to smoking in an actual smoker, semi retired chef living in Knoxville, TN... Figured with all my extra time I can do this smoking thing the right way now.  Instead of doing it make shift or buying product already smoked. Current smoker is a Smoke Hollow 44" model... Sort of liking it.
