    short ribs

Cooked up some short ribs today that my cousin gave me from his freezer from a beef he had butchered about a year ago. Were not freezer burnt but had, to both my wife and i, what can only be described as a strong taste. Pretty disappointing and I have a couple more packages left. Also have two...

    Had to try my hand

My wife has made "pepper poppers" in the oven but this was my first attempt at ABTs. Weren't perfect but the taste was excellent. The bacon wrapping could stand improvement and I was worried about getting it crisp but somehow it got a little too much crisp on some of them. Also made some bacon...

    ABT's & stuffed burgers

Looking to do some bacon, cheese, onion and maybe mushroom stuffed burgers & ABT's on the Pit Boss this afternoon. Have done a lot of googling and seems like there is no consensus on cooking temps. Should I go low, 225ish or hot 375ish? Obviously I'd like them to finish at the same time. What...

    lumber jack

This might not be too exciting for any one but me but this is what $100 + a little tax got me. LJ is hard to find locally but a friend of mine lives just a few miles from a Rural King and he picked these up for me. After all I've read about them I'm looking forward to burning them up!

    Nuthing fancy here

Just one of my favorite foods. Wings smoked on the Pit Boss w/a light smear of bourbon sauce. Don't know if I'll ever fry a wing again and I love fried wings, but these are so good and so easy. Clean up is a breeze too.

    chuck roast vs brisket

I've smoked a lot of pork butts, ribs, chicken wings, etc and have had great results but I don't have a lot of experience with beef. I've done 2 briskets and while OK they were somehow lacking IMO. My only real success with beef has been with ribs. So today I decided to experiment with a 3.5#...

    A day of firsts

Gave my new electric smoker build and my new AMNPS their maiden voyage yesterday and thought why not break 'em in with my first fatty. Kept it pretty simple, in fact just kind of stuck my toe in the water. Started off with 1.25# of 80/20 hamburger, swiss cheese, onions, mushrooms, green peppers...

    Wooden/electric build

I started this smoker a couple weeks ago and am currently gathering the last pieces and parts to finish it up. I have a 3500w 240v broiler element on hand that I am planning to install. First I will line the bottom with fire brick. I also want to assemble a PID controller for it. The smoke will...

    PID question

I am in the process of building an electric smoker and know nothing about PID controllers. I've done a lot of reading & searching but I don't think I understand everything I know about PID's. Curious if this one is usable to run a 3500w 240v broiler element that I have on hand and I'm planning...

    Hey y'all

Dropping in from central MO to say hello. I just hit middle age, if I live to 106, relative newby to smoking as a means of cooking. I just started smoking last winter but I've been cold smoking deer sausage since I was big enough to follow my dad around. I currently use a UDS that I built last...
