    NEW SMOKER PURCHASE

    I just sold my WSM (was hard to do since I love the results) so that I could venture into the pellet world.  Did a ton of research and my final decision was the Blaz'n Gridiron.  Called Tim yesterday and ordered it.  I hope my decision will prove positive.  I look forward to the adventure!!!!

    Brisket cooking too fast

    Brisket cooking too fast!!! Have it on a WSM 18.5 and used minion method for starting coals. Full water pan and Party Q controller. Brisket, 6.5 lb, went on at 5:15 AM and is at 167 center temp after 2.5 hrs. Shut the Smoker vents and had turned off the Party Q but the WSM temp is still 270. In...
