Trying a beef brisket again
I'm smoking another brisket again on Tuesday my first one looked and smelled great but it was a little chewy. I'm looking for advice on what I did wrong. It was a 8 pound brisket it cooked for 61/2 hrs at 225-250. I pulled it at the temp of 160 a and let it rest for 30 mins. Any help and advice...- capt cave man
