When I mix together my jerky recipes I find that the spices don't all dissolve. My question is should they? I thought of heating the mixture a little to try and dissolve them better and let it cool before putting the meat but I'm just not sure. Any help would be appreciated. Thanks
I tried Alton Browns jerky recipe and I really liked it but my son found it too spicy. Could I add more honey or brown sugar to help make it not so spicy.

Well I tried my smoker today for the first time. I tried sausage and an onion and an egg. Smoked at 225 for 1.5 hrs. The sausage is Johnsonville original brats. I wasn't a big fan of these sausage on the grill but they were good today! I used charcoal briquets and maple wood.
