    Chicken Sausage Done!

Great idea!  That's the concept I was going for, as in, gently bringing them up to temp so as not to render the fat.  I have one of those counter top roasting pans!  My wife used to use it for pot roasts until I bought her some big, enameled iron pot.  Well, she bought it, but I "bought" it!

    looking for hot dog advise

The water bath at the end will cut some of the smoke flavor.  That's why I like a strong smoke on them. Good luck - homemade franks are different but really good!  Post some pictures of your work.

    Chicken Sausage Done!

Interesting you should ask as I tried a new way on these... I usually put my hotdogs or sausage that I want precooked into a pot of boiling water and measure the IT on when to pull them.  However, I always get rendering of the fat and they seem drier than my test fry.  This time I used my...

    looking for hot dog advise

I have only used hickory.  I could see pecan or oak being good as well.  Hotdogs are pretty heavily seasoned so I would stick with the stronger traditional woods, but people seem to find some good stuff off the beaten trail.

    BREAKFAST LINKS

Yep, I love sheep casings vs hog casings now that I have used them. I have learned two things about sheep:  1) Don't soak them too long.  An hour or so is plenty. 2) Don't pack them too tight.  You almost can't tell that there is a casing there with sheep.

Did you use their link sausage seasoning or one of their other sausage seasonings? http://www.aclegg.com/seasonings/

    Chicken Sausage Done!

I tweaked it a bit with apple sauce and milk powder while omitting the oats, but it was very tasty.  Wife likes it, so I get to make more!

So, the idea of sprouts is to let them germinate, grow some length, and then put a little light to them?  Sounds like a plan.

    SQWIBS Urban Garden Adventure

Ouch.  We have been in the 60-70s during the day and usually in the 40-50s at night.  A few cooler snaps of 30s at night.  Yeah, we were in the low 70s Christmas Day as well. I pulled my tomato plants today...  I cut off many suckers and stuck them in water to get them to root trying to get a...

    SQWIBS Urban Garden Adventure

I wish I had the space for a grow station.  My little area is a corner of computer room.  It works, but I would like to have a table size deal like you. I have had really good results with rockwool, but I am trying a 60-40 mix of peat moss and vermiculite this year.  I hope it works or I will...

You listing your plantings made me think about a tomato plant - Matt's wild cherry.  It is supposedly an old school breed from Mexico that some guy named Matt re-discovered on a visit to Mexico and then marketed.  Who knows?  Anyway, the fruit is about the size of a marble (the small ones we...

    SQWIBS Urban Garden Adventure

I do have a control bucket.  My float is in a small tote over near my hose bib.  My control bucket is closer to the actual plants so that when I add fertilizer to it the water doesn't have to wander down 50 ' of hose to get to the first plant.  I drilled a hole about 3" up from the bottom and...

    Anyone making pepper jelly?

I used some melted datil pepper jelly on some fried chicken wings instead of wing sauce a week or so ago.  Different but good.  I need to branch out and try it on more things like you did. The wife loves the jelly but I haven't been able to get her to agree to letting me glaze ribs with it yet.
