Yes I made the sauce too. It is great, still have a little left over sauce in the fridge. I did add a little extra cayenne to take the heat level up a bit. Thanks
Just a thought.....how does this apply to cold smoked dried sausage? From what I know, the cure, along with the smoke, protect the sausage then the reduction of moisture and weight loss during the drying process makes it safe for consumption. (I know moisture is the beeding ground for bacteria)...

It has been a roller coaster of ups and downs for us. Losing my part time job, grandson having seizures, and some cash flow money issues. At least my health has been ok. Just remember when you are down the only way out is up. Be thankful things are not any worse. Stay positive.

My gosh, I brined and fried using your method and good god, man it was good. The rest of the breast I trussed up like you did and put on pellet smoker at 350 for an hour...geez so delicious. You cajun folk got it down. I appreciate you sharing it here my friend.

If you are a back yard bbqer you are certainly welcome here. We all share info and experiences, if you need answers someone here will have it along with solid advice. BAMA and coonass is a pretty good mix in my opinion. All my ancester were from Arkansas/East TX and N Louisiana.
