Yeah, @bpacilio59 , I will not try to talk you out of buying a pellet grill. Their are so many really good ones out there, RecTec at the top of the heap.
But, seriously, you can't shop for a 'smoker' without thoroughly checking out a Weber Smokey Mountain cooker. They know what they are doing...

I've been doing something similar for a very long time. Just simply quarter a white or yellow onion, one pat of butter, salt and pepper and wrap the same way. But I like Keith's recipe a whole lot better and can't wait to try it. With the Vidalia onion and the sauces it...
I'm in the same boat as you. I normally look for Johnsonville simply because the quality is consistent. I'm sure there are lesser known brands that are as good if not better. Just my $.02.
No experience but I would give it a try. I'm sure it will work just fine and give good smoke flavor. But, I suspect you will be paying a premium for the fancy packaging/marketing. I'm really curious what's actually in the 8 lb. package.
