65 day Drybag Aged Rib-Eye, Shrimp and Twice Baked Potato

Would love to hear more about your dry aged process too!

    Pulled Beef

Definitely agree with this. The chuck roast should work nicely, but you could also break in your new smoker with a marathon of brisket!

    IGrill

I love the iGrill. It can be a little finicky to connect, but it's a great addition to the whole kitchen. I'm a new member here, and my thread is on hold, but just tonight I posted some iGrill data charts with a brisket smoke I did today. Will link once the post is released from moderator...

65 day Drybag Aged Rib-Eye, Shrimp and Twice Baked Potato

Looks amazing, ribeye is the best cut for steaks, and dry-aged is just that much better.

10 lbs of Choice Sirloin Tip!

That looks incredible.  I might have to try this next.... Would love to do that with a nice standing rib roast.  Perfect color on the inside.  I'm assuming you sliced it thin, but how was the texture? Was it tough at all?

I turned into a smoker when I moved to Texas

Thanks! I've been lurking for a few weeks, love the advice and breadth of knowledge on here! Now if only my q-view heavy post would get approved by a moderator!  *hint hint

Q-View & Graph! BBQ data for my wussy Briskey and the break-in of my new offset!

Hey there - Just put up my first post in roll-call with some history, BUT, I decided to fire up my new toy, a Old Country Pecos smoker... I love it.  Anyway, I couldn't devote to an all day smoke, but I wanted to get some smoke through my new beastly pit... So I went to H.E.B. and got a 2.5#...

I turned into a smoker when I moved to Texas

Hey all - Moved to Austin in February from the city of brotherly love, Philadelphia!  Work had a BBQ competition in March, got the bug. A good guy at work gave me his old char-broil offset in rough shape, cleaned it up and refurbed.... learned to smoke on that thing over the past 3 months...

    Texas Weather.....

Hey we've had some pretty decent bouts over the past two weeks (Austin).  Seems to be cleared up.  Rain is needed, luckily no hail though.  All the rain is good so it can fill up the lakes!  I was able to get a clear few hours last Sunday to smoke up a whole bunch of chicken!
