I can promise you that you will absolutely love your UDS! I am amazed at how efficient and easy it is to cook with! (I have had mine for about a month now...).
Congrats on your drum!
Freshmeat...
glad to hear it is working for you!!! That is a cool bird leg rack! You forgot to mention the brinkman smoker you brought me... I am thinking about a double stacked brinkman charcoal smoker.... :)
Rcullison,
Nice job... I am very interested in your UDS... do you have pics/description of the build? I am assuming that you can access either rack through the side doors? and want about the fire box?
all purpose...
Bassman, THANK YOU! just took 2 round loaves out of the oven...probably should have let it cool a little more before we cut into it (cam battery dead, so no qview), BUT...it is sooooo good!!! I can see this becoming a weekly event around my house!

My first batch of sourdough is in an oiled bowl sitting in a warm spot on its first rise!
Thanks to lots of help from Bassman, I got my starter going (it finally "foamed up" after about 24 hrs!). I love sourdough, so I hope it comes out good...it should, I am following Bassmans white sourdough...
JJW... to me the really obvious choice would be a UDS. I just built my first one...maybe a total of 3-4 hrs of actual work (the flame paint job was extra!), plus a trip to the hardware store to get in functional.
Advantages;
you get to build it yourself
it is EASY to cook with
it will easily...
Mmmm... wow; that cheese melting out the end just sends it over the top! that tator tot and cheese combo will be my next one!
great job!
Excellent weave
That slaughterhouse brine recipe looks interesting!
I smoked a couple of yard birds today...I always brine a chicken unless I just didn't plan ahead. I used 1 gal of water with 1c kosher and 1/2 cup white sugar; a couple of bayleafs, @T of ground sage and a handful of cracked b. pepper.
I am...
I would be happy to do an unbiased review of the sea Capn's Special Meat Rub...!!!
Cool label! Most local print shops could run these for you; we have a business service at the local walmart...Frank can print coffee mugs, vinyl banners, does laminating etc... I know you can get letter size...
Good sale, not "great"... it is pretty cool to walk into a regrigerated truck and see pallets of meat though!!!
Pork butts $1.19/lbs, spares $1.49/lbs, picked up a bologne chub... haven't smoked one of them in a while!!
walking out the door to a truckload meat sale... from what I understand the local grocery store literally has a refer truck in the parking lot full fo meat and everything is on sale! I am taking the camera!!!
more to come...
