So yet another I'm building a UDS (what do you expect in this sub?)

What do ya'll think of some shelf brackets so I have freedom to move the grates? Since I'll be going flat-lid at first until I can get a decent cheap kettle for parts I'll need the grate further down. Once I find the donor kettle I'll be needing to move it up. Instead of having extra holes if I...

So yet another I'm building a UDS (what do you expect in this sub?)

Thanks for the well wishes about my back, it'll get better with time I'm sure (I hope). The worst of it is when the spasms start it feels like I have a kidney stone because its pulling my side muscles so much. Afterwards, like today, it feels like I just spent the weekend throwing up because my...

So yet another I'm building a UDS (what do you expect in this sub?)

Ok, so I have most of my hardware. No luck finding a cheap used weber to use for parts so I'm having to buy new for everything. Here's what I have: 3- 3/4 pipe nipples 3- conduit locknuts 2- 3/4 caps 1- 3/4 ball valve 2 Garage door handles for barrel 1 stainless steel handle for lid...

I'll see what I can do, might have something around here I can use to keep it steady. As for the nipples. How long should they be?

So yet another I'm building a UDS (what do you expect in this sub?)

I picked up my barrel today from work, sadly the only metal barrels we get hold a type of adhesive but the barrel is actually spotless...if you don't count the red liner. Anyway, I also grabbed 4 pallets while I was at it, if I need more I can get as many as I need to do a proper burnout. I'll...

The wife says she wants the turkey cooked in the OVEN

I have a sign hanging up above my shed, it says 'You can't tell me what to do and how to do it, if you already know the best way to do it, do it yourself!' My wife, luckily, loves smoked food. If I say I want to smoke something, I don't hear anything else about it. That being said my dad is...

    Smoked Chicken looking right?

I've smoked chickens probably 4-5 times now and every time the chicken has red in the meat, especially near the bone. Temps are at 165 before I pull them, checked in both breasts and the thigh. Color looks great, smell awesome, just a little unnerved at the color.

I left the skin on, smoked at 350 to crisp up the skin. Crunched like a potato chip.

Lump vs briquet question (Not which do you prefer)

My smoker has quite a few leaks and can be a challenge to keep temps stable, but I've found that once I get the temp dialed in, when its time to add some more coals, I can add a handful of briquets unlit and open the vents up a little to aid in getting them started. To make sure I don't send any...

you know you're hooked on smokin' when...

When your wife is looking for something to cook for dinner, the freezer is full of meat and she can't find anything to cook because everything in there is "to be smoked". Up until I started smoking my wife couldn't get me to cook anything, now my days off are spent tending the smoker all day...

To Cover or Not to Cover, That is the Question

A buddy of mine made a custom cover out of flat roof membrane. There are membranes that can tolerate high heat and extreme cold for years without deteriorating. Its big and heavy, doesn't tear easily and is waterproof. Most remain flexible in negative temps too. A little cutting, some heavy...

Whole chicken smoke on a whim

Anything but the penalty box! Pics aren't good but any pic is better than none, right? Turned out really good, I cut a few slivers for myself, the birds resting now waiting on my wife to pull it. Definitely made a good use of the left-over coals. Its definitely on the small side but it was in...
