    What's for lunch?

It'd make a heck of a pulled pork omelet.  Thanks for all the good comments.  I'll try to post the prime rib I'm doing for Thanksgiving.

    What's for lunch?

Thanks.  It was very tasty.  Planning on smoking a prime rib Thanksgiving, and I can't wait.  That's might be my favorite thing to eat.

Need some advise for this weekend

I smoke mine low and slow, between 200 and 250 normally, and pull it off after it reaches an internal temperature between 190 and 205 (195 is optimum).  I rub them and then wrap in plastic wrap for a least 4 hours, usually a day.  Here is a link you can get some good info on butts, if you are...

    What's for lunch?

I had two butts from Sam's and put on my rub (Worcestershire powder, smoked sweet paprika, Chipotle pepper, garlic powder, salt and pepper, and a couple of other things), wrapped and let them sit in the fridge for about 8 hours, then smoked using apple and plum wood low and slow (about 17 hours...

    First Cheese Smoke! with Q-View

I wouldn't think twice about eating cheese that had been vacuum packed and left at room temp for days.  I know many people who just cut off the mold (me included at times) and eat cheese.

    First attempt at Brisket

Kaescot that looks like it's not your first rodeo.  Here's a link to an article I found very informative about brisket.  Hope you enjoy.  Good luck. http://www.amazingribs.com/recipes/beef/texas_brisket.html

Brick smoker - Compete how to

Wes, thanks for the link.  I love brick grills, and yours is very nice.  I question the amount of butts you list as your max.  It looks like you could do that many on one shelf.  I used to think the butts shouldn't touch, but wiser smokers told me they could and I found out they were right.  I...

Thanks for all the positive comments.  I've already waited a whole day and I'm busting a gut to taste the smoke.

Finals of the Sept Throwdown voting

This is my first visit to the Throwdown, and I don't have time to read all of the post.  But just browsing for a few minutes, I feel like a 5 year old at Christmas.  I can't wait to read more, and I know I am going to try more that a few.  Thanks to everyone.
