I am from Petaluma CA and I am a #2 owner for bout 2 years. Am very happy with it, especially once I mastered the cold smoking plate. Have no mods and no plans for any.

I have had my Smokin-it #2 for almost 2 years. I run it all night all the time. I use an easy up if it is raining. No issue with the cold at all. Very nice to put brisket on at 6PM for the next day's dinner.

I'll throw in my vote for the #2. I have had mine for over two years and am extremely pleased with it. Once I figured out how to use the cold smoking plate, I was off and running. NO MODS required. This is nice as I have a Chargriller Outlaw and it took a few mods to get it to work properly...

To your question about the cold smoking plate...
The trick is to put a bowl of ice on the cold smoke plate just below the cheese. This causes the burner to keep running but the temperature the cheese sees is below 90F.

I use hardwood chunks in my model 2. Way more smell (yummy!) than smoke. Keeping the temps down will sort-of help., but you'll still get the smoke.
When I use the added pan of water, depending on the weather, I get wisps of steam out the top. Make sure that is not what you are seeing.

I've had my #2 for little over a year now. Absolutely love it. It would be nice to have the slide out drip pan. That was added after I got mine. I have smoked meat, fish, cheese on it. The cold smoking plate works great.

I have a #2 and its been wonderful. I cold smoke using their cold smoking plate and a bowl of ice. Never have seen a need for an ANMPS. Most likely will upgrade to a #3 soon as it is bigger. I took the chance and bought it site unseen due mainly to reviews and a email exchange with Smokin-it.

I recently did 20 lbs of brisket in my #2 and it was 205 degrees in about 12 hours. You might send Dave an email. I have had 0 issues getting the unit up to temp and mine holds temps within 10 degrees.

I Bought the Smokin-it #2 and love it. Was much cheaper than the Cookshack. Unfortunately, cost was a factor for me. Smokin-It has been fabulous. Use it all the time.
Still use my Outlaw with SFB when I have time and beer.
