    Bottom Round Roast Smoke

Testing the new vertical smoker build with a longer slow cook. Started with a 3.5 pound bottom round roast added some garlic cloves inserted into the meat through the fat cap and sides. Dusted well with a blend of salt and pepper with a few other spices. Used a bacon web over the top for first...

    electric? propane? charcoal? please help!!

Kinda like I did with a cast Iron pot top for heat diffuser. It could take a piece of wood or even chip boxes Holds the heat well. Gives you the ability to mix up your smoke profile.

    electric? propane? charcoal? please help!!

Kmart you can look at my build here Vertical Pellet Smoker Build (Food Warmer/Proofer) It might give you ideas. The pellet is easier to control heat to a certain degree over charcoal. It is limited to a certain point because the pellets require a fixed amount of air to stay burning. So to over...

    frozen vs fresh brisket

Just so you know. Most good butchers have hung beef for more then a week and up to 3 weeks prior to being cut. Now if you feel you need wet aged longer thats a personal choice. Dry aging is another choice too. Given that said there is hardly ever a cryovac piece of meat that hits the...

    electric? propane? charcoal? please help!!

There has been some pellet hopper freezer builds too, like muralboy said. They work nice but you need to get a good amount of venting into a insulated cabinet. The pellet pro has temp gauge PID to control your temp for what ever level you want to smoke at. They can be a little light on smoke due...

    frozen vs fresh brisket

If you ask Arron Franklin he says freezing a brisket wrecks them. Makes them tougher then fresh to the smoker.  He has videos on how to check to see if they are fresh or have been frozen. If fresh they are pliable and will double over easy. If they have been previously frozen they don't want to...

    Vertical aluminum smoker build

Out of the first test on my build with the Cres Cor warmer I am finding that a little wind would help. The temp still is hard to keep down. It has so far been running about 200 to 220 at lowest settings.  Both the bottom vent and stack wide open. The Pellet Pro at lowest settings is providing...

Vertical Pellet Smoker Build (Food Warmer/Proofer)

Have a few more little tidbits to put in and then it'll be on to the testing. Picked up some four-inch exhaust pipe and got it welded in a 90° angle to be installed this weekend. Will paint it with high temp silver paint to keep with the aluminum color. At which point I should be able to go...

Crispy Skin when no fridge is available

Thats called using a salt dome. You would not get smoke to the chicken doing it.

    Vertical aluminum smoker build

With the pellet hopper making non-stop fire to hold temp. It will not be much different then a smoker grill. Now if its insulated then it will hold heat too well. You have to make big vents to bring in cool air.
