Full front view showing pellet hopper and front vent. I could not get the heat to come below 230 deg till I installed second vent in the door. Now the cooker will come all the way to lowest temp of 165 deg. Great for doing Jerkey.
Top door with Themometer in the door. For reasons beyond me it reads low temp. I think the door causes it to be cooler reads because the prob does not go far enough into the cook chamber.
Adjustable rack holders. They can make as much space as needed for most any piece of meat. You can see the drip pan that was a Stainless Steel quarter fender off a truck. I hammered it out flat leaving a arched area so the drippings will center out and drip into the catch tray.
If your going to buy something then I would look at Yoder Wichita or Horizon Marshal smokers. Perhaps the Lang padio would be what you are looking for as well. The price can be a tad high but honestly they will out last, ten 200$ cheap grills you can buy at the box store. As for it being reverse...
With a lot of cylinders you find the metal was rolled to a point then welded together. The metal was not rolled into a cylinder where it was a point, that it did not need the joint pulled or pressed to make a match. Naturally the metal has a pulling action to open up the arch or pull in the...
What are you using for cutting? Main reason for distortion is to much heat being transfered throughout metal. You can work to cool the metal faster after the cut or heat up the entire piece being worked to have it warp less because its all under heat. Thats a difficult thing to work with in that...
Are you going to buy one or build one? The amount you plan on spending will run what you will end with. I have a off set early Brinkmann Pro that was built by Horizon Smoker makers, in the early days. Have had that smoker some 13 years now and it just shines on the weather like a champ. Its a...
Take off the bark. Birch is very similar to maple smoke.. But do not use the bark at all it has wicked oils in it. Actually you can pack a can with birch bark and heat it up to extract the oil. The oil was used in tanning leather back in the day.
Smoke Daddy Inc sells them too. I think they are a bit better then those. Price wise I don't know how well they compair. I used the Smoke Daddy in a cabinet build and it works great maintaining the temp within 5 degrees.
To me it looks great. I will say it might be too small for 2 turkeys. Be one at a time anyway. Perfect for some family cooks. If you have good heat control and it holds fire for a long cook I think you have a winner.
Stag now that makes the UDS look purdy... I guess you could call it the UBS Ugly Box Smoker lol... It only needs to work everything else doesn't matter much.
How much do you have to spend on this build will dictate what you can do with it. There are all kinds of smokers build on this site from very cheap builds to wildly expensive builds. The more things you throw into your smoker for convenience features will make cost of the smoker increase but the...
The more area you expose to cold weather is going to be heat robing surfaces. Getting your heat to your cooking chamber the quickets way possible will give you the ability to control your fuel consumption. increasing your flue size will move more fire exhaust into the cooking chamber. So weather...
That size of barrel is fairly cheap as listed. It would have to be on a trailer to be mobil, hard to cater with a stationary cook station. To be honest I would think for a company that does lots of catering would be best served with a smaller smoker with more cook stations on the trailer. That...
You need adiquate exhaust in order to create draft. I did a insulated cabintet build with a Cres Cor Food warmer. About same as refrigerater build in design. You can check it out here (http://www.smokingmeatforums.com/t/233063/vertical-pellet-smoker-build-food-warmer-proofer) Like you in the...
Lance did you look at my food warmer smoker build? I went with the pellet pro hopper assembly. It works fantastic for easy to use and temp control. I have done several cooks now with it from briskets to beef jerkey. Its been spot on for temp on every cook. I had to change out the upper seal to...
