    I'm hot smoking some Italian sausage. Smoker is purring along at 265. Anyone have a general guideline on how long it should take?

    Thanks Bill. I have one of the cheap Brinkmann square two door models. The wife's cousin made me a couple charcoal baskets out of expanded steel which made it work perfect!
