    1st A-Maze-N Smoke w/QView and Questions

Hi Pokey,   As far as your Gouda sagging, you can put some kind of a foil tent to use as a heat shield under your cheese so when it rises the heat will go to the sides rather than straight up and heat your cheese. Just a thought. When I smoked mine I had my AMNS right beside my racks of cheese...

    Temps for Cold Smoking

I've smoked a good bit of kosher salt, but it wasn't a cold smoke. I've done Pecan Kosher, Pecan Kosher Jalapeno, and even tried Pecan Kosher Habenero. All have their own flavor. As you can see I'm partial to pecan, but smoking salt is a long process. Salt will not absorb smoke and heat does not...

New A-Maze-N Smoker, and a few questions

iSmoke,           The only thing I would say from what everyone else has posted is if you are smoking cheese you may want to use some kind of a heat shield. Putting a foil tent over you AMNS will help keep any heat from melting your cheese, heat rises, but other than that the only problem I've...

How did you come up with your screen name?

I have one of those last names where there aren't a lot of so I just put my first inital and last name. Usually there aren't any other distre's out there. So I don't have to do the 1 - 2 - 3 thing, guess I'm lucky.

    Todd has done it again!

The screens I use on my cheese are just the wire rack you use on a bun pan for fried foods to drain. I went to the local restaurant supply and picked up half sheet sizes for less than $ 6.00 each. They seem to work well, you just need to put some kind of spacer between the racks for ventilation...

    Cheese and the Food saver

I was going to get a foodsaver for Christmas, but I went to Academy and they had Foodsaver Gamesaver Pro for $ 88.00, so there was no waiting for Christmas. So far I've sealed Cheddar, Parmesan, Gouda, Pepper, Monterrey, and Mozzarella with no problems. The soft cheese they talk about must be...
