    New smoker build

Finally got the smoker finished. I've ran it 3 times now and it runs great. I was having about a 100* difference between the horizontal and vertical. My stack was too small. I cut it off and put 6 in pipe stack on it. Now I'm down to a 50* difference. And it is super easy on fuel. It will run...

    New smoker build

I've been real busy on the smoker the past few weeks. It's pretty much done and painted. Still have to put the shelf on it but waiting to get fenders for the trailer first. Here's some pics.

    New smoker build

I don't doubt either one of yalls knowledge. But seeing proof it works is another thing. If I don't like it, its just metal. It can be cut out. Now back to the build. I got the vertical door cut tonight and started on the hinges for it when another storm rolled in. Didn't get any pics but will...

    New smoker build

I have seen 2 pits with it and they have been running great for years now with excellent temp control. That's why I incorporated it on this build. If it doesnt work then I can do away with it.

Old Country BBQ Pits All-American Angus Smoker

I just looked at one of these to see how the vertical chamber was built. My opinion from what I can see is the opening between the vertical and horizontal cook chambers is way too big. Its a big rectangle cut out at the bottom of the vertical. One modification I would make would be to close it...

    New smoker build

Thanks for the advice Dave. I have a buddy that has the same thing on 2 of his competition pit's for years and they work great. Easy on fuel and has never overheated the Firebox. I have it on a butterfly valve handle that locks into different positions all the way to wide open. Again I...

    New to me refurbish

That's a solid foundation for refurbishing. I would weld in 1 1/2 in angle rails for a slide out cook tray. Maybe add another about 4-6 inches above the bottom grate. I would tack the door shut at the bottom to keep it from springing out when you weld the flat bar to the side seams. I didn't...

    New smoker build

I haven't posted on here in forever. Been busy with another build. Some of y'all might remember my first one. It was awesome smoker but we wanted something a little smaller. This new one is 24x40 cook chamber and 24x18 Firebox. 3/8 thick pipe. I built the 4x6 trailer for it and had it almost...

How to prep new steel for cooking?

I start the biggest fire that will burn in it and burn it out. Clean all the ash out and wash it out good. Then season.

Opinions on first burn and seasoning a smoker for the first time?

I used 15 pounds of beef fat trimmings from the local meat market. Brought smoker up to 275 and cooked till the trimmings were dry. I have a real nice dark color in the smoker and it has stayed oiled good through 2 cooks on it.

My 250 Gal. side box build.

Ryan I used a pear burner to start 3 pieces of post oak then once I had a good coal bed only 1 quater stick an hour or so. The sticks were around 18 inches long and about 6 inches wide.

My 250 Gal. side box build.

Finally got my first cook done on it for Easter. Pork steaks, leg quarters, and sausage. Once I got the heat in it It held 250 consistently. Runs real good as far as wood consumption and recovery time was excellent.

I hear ya about it being hot as hell. It gets pretty hot here in the summers. I didn't really insulate it. I just put fire brick on the floor and 1 brick up around the sides. Id like to see how it runs when its a lot cooler outside but that'll have to wait till October.
