    The one that got away

I was watching this last night trying to decide if it was worth driving to Kansas City to pick up. One of my kids woke up about the time the auction was closing and I never got to bid. Sold for $14.00. I was heart broken. Stainless inside and out. Motors, fans and compressor had been removed...

If there can be wine snobs, why not wood snobs?

Hickory has a bolder taste than mesquite to my palate. Almost a bite to it, like sharp cheddar compared to plain. I'm told I'm in the minority with this opinion. Down here mesquite is THE way, even though it's 150+ miles south to find any growing. I didn't have hickory smoked anything until I...

    Kelvinator--going for full electric control

Doesn't look like Engineer has been on in a long time. Wonder how this ever turned out... To turn on/off smoke without cutting off the air supply to the smoker: With an external smoke box (automated however you wish) and a tube that connects the smoke box to cook box. Picture 2 tubes stacked on...

Add a smokebox without modifying a Cookshack Original (and a Qview)

The mini fatties turned out OK. A but too much smoke for my liking, but the wife and kids loved it. Most of the cheese stayed in even though I didn't layer it correctly. Can't wait to get an AMNPS in a separate box where I can control the smoke a little better.

    Tenderized Round Steak smoker suggestions?

I'm in Oklahoma, plenty of beef around here. We raise our own, as well as my parents and in-laws. When we have beef butchered, we always tell them to tenderize the round. (Tenderized meaning ran through a motorized Jaccard cutter-type thing a few times in a few different directions, not...

Add a smokebox without modifying a Cookshack Original (and a Qview)

Evening Gents. While I figure out what smoker I'm going to buy or build, my mom offered to let me borrow hers. Between her and her new husband they have 3 now and the Green Egg gets most the love. So I went from a borrowed MES40 to a borrowed Cookshack Original. Aside from being tiny with...

Converting and upgrading a Cajun Injector XL

Nevermind... 30 seconds after I posted I find a thread where someone used the element out of a hotplate to replace the element in their MES30. A little light on details and pictures, but I think I can figure it out.

Converting and upgrading a Cajun Injector XL

Hello gents. I've been poking around and have come to the realization that I'm going to have to build a smoker to get what I want. Some of you guys fab-from-scratch jobs are quite impressive, but I've got 2 young kids and just don't have time for that kind of project right now. However, I have...

    Hello all

I've been lurking and reading or a week or so now, figured I probably better start an account and become active. I'm the household cook and a constant tinkerer. Grill, smoker, oven or stove there isn't much I can't cook, but a lot I choose not to cook. I added a smoke box and rotisserie to my...
