The only adjustable regulators I've been able to find are high pressure revulators, most of the commercially available smokers use low pressure regulators. Someone can correct me if I'm wrong.

Yep those are the ones, with the vent I used I'm able to look in with my smokehouse sealed up and see the flame. Once I backed the screws out I was getting a decent flame, you want as little if any yellow flame as possible. Propane is to expensive to waste!
Looks good, you wont have any problems outta that NT burner. One suggestion on tuning the air mixture.....don't waste your time setting it up in the shop for proper air mixture, once its in the smokehouse with smoke rolling its not going to be right. Just open the air mix screws all the way or...
I have the Northern grinder and it works great for my needs, I left some cubed meat in the freezer to long and some it it was frozen pretty good and it chewed it up no problem! Not a bad grinder for a Hondo ($100)

Not that it really matters now, but I did some hi mountain snacks sticks yesterday and that is definitely the cure supplied with their kits. I shore wouldn't try to substitute it for cure 1 though because you don't know how or what it comprised of
You bet ill be posting pics of every smoke I do! The sticks came great, although I don't care for the flavor to much personally everyone else loves em though. I need to hit Nepas up for his slim Jim recipe I hear alot of people talking good about that one.
