I've never heard of drumsticks being turned it. They could be hard to get the "bite through".
If I was you I won't put in the breast slices. The judges are going to score the drumsticks.

The trouble with small diameter wood is that you get a lot of bark.
Bark ain't real good for smoking. Some bark sure, but I won't even bother
with apple branches under 3",

I usually stay out of these "guess that wood games" but over the years I've eaten enough oak saw dust to say with no doubt that that is oak.
Note that there are many varieties of oak native to different regions of the country even some native to Florida.

Depending on where your at you might be fine but Minnesota is a heavily regulated state.
To legitimately do custom smoking would require a licensed facility and there are many city & county health inspectors ready to nail ya.
