BBQERSDELIGHT has 2# smoke stix, you cut off 1 in. put in your cooker and works just like wood for several hrs. they're inexpensive and you dont have to store wood around, and no ants or other insects. I did'nt see peach, but they have pecan, hickory, etc. just thought this as an option.
I agree with white cloud, hold off on the ribs. you can do them like 2 hours before you cook, theres just not enough meat on the ribs and they can come out tasting "hammy" because of the salt content. hope this helps.
welcome to the smf!! I've never cooked on the green egg but heard they are very good holding heat, etc. low and slow really produces excellant product, it may take a little practice but with the help on here you will do very well. just ask questions and someone will try to help you. again welcome!
welcome fellow pellet cooker! I've never seen that brand of cooker, but I'm sure you'll enjoy it. I just got one about that size by louisana-grills, a pellet cooker also, I like it.
my cookshack FEC's are named "cheech" and "chong". the old hickory is called "katrina" by my sister, but I just call it my baby. the rest of them don't have a name yet.

I dont feel brining would serve any purpose, when there's so many options that would do do what your looking for. I've done briskit without injections, marinades, or brining. just practice, practice, practice!

about a month or so ago they had a article in the paper that someone here had bought a SONNY BRYAN BBQ franchise. suppose to open like 5 or 6 around tulsa area. they either have a lot of money or know something we don't.
