     Too funny Foam. The results are in!  Almost everyone preferred the brined chicken over the injected. Although both were really good, I may have been a little heavy handed with the creole butter.  I guess I didn't really prove one is better than the other, just need to work on the execution...

    Chickens into the smoker at 2:00. Left one is brined, right injected. Both dusted with rub. Smoker set at 275 (High as she'll go). I'll be using cherry, maybe some apple.

    I'm doing 2 chickens for my mom's birthday sunday. I'm going to brine one and inject one, keeping every other step identical to see which one I like best.  I've never injected a bird before, what do you guys recommend?

    Last minute turkey question

    Guess I should not have wait till the last minute with this post. Turkey is in, if it gets done a little early I'll let it stand, then put it in the oven to reheat/crisp up the skin.

    It's almost go time, frying an 11 pounder and smoking one same size. MES only goes up to 275, how long should it take?  I'm thinking 4-4.5 hours. Also, should I fill the drip pan or should I keep it dry to keep the skin from geting rubbery. thanks!

    First Brisket

    Success! It took seven hours to cook, plus an hour rest. meat came out moist and tender, very tasty.  served with barbeque beans and garlic mashed potatoes, covered in smoky au jus made from the drippings. Next time I need to get a bigger brisket, 4 of us finished it off easily. Thanks...
