    Fancy not too Shmancy Salmon

Well, it was my wife's birthday last week and she wanted smoked salmon so I was going to try Disco's Fancy Shmancy version. Well, I ended up getting the flu or some awful crap the day before so all I could manage was to fillet the one belly side and pin it with a small skewer (no butchers string...

Today's brisket, kind of a teaser...

Nice smoke, and nice of you to share! I had to laugh about your cat coming running to the sound of the knife!

    My new slicer

Nice! I've been thinking about one of these and I have to ask... Are these a pain to clean, or is it pretty quick and easy?

    Ribs without the 3-2-1 method

I had to look up the Assasin 24 to check it out. Cool looking unit! My advice won't really apply but one thing I noticed with smoking ribs without any foil is if you're like me and use a lot of wood for fuel, you have to be careful and keep that smoke thin. Otherwise, 6 hours later you can end...

    New Traeger

Congrats on the nice new unit! I would agree that any time a new toy can be had without argument is a good deal! I'm sort of with Al. The smokers are all my job, but my wife knows her way around the gas grill! Not sure if she'll ever get into the smokers but time will tell.

    Vortex arriving on Friday

Well in all reality I probably don't need it. But it does have me thinking. I have the UDS and offset for longer smokes, and LP for the quick cooks, and my wife would probably wring my neck if I wanted another one. I do have a small Weber that I use as a chimney starter, but I it is very small...

Look what my wife/son gave me!

Right! Everything seems good as long as I keep the coals off of the actual firebox, just some touch up spots on the top. Thanks again everyone!

    Propane source

Jeez! $9.00 for a fill. Last I filled I think it was about $15. I don't use a lot of gas, mainly for burgers and brats and stuff so if I somehow run out on accident I'll either light a small fire, or just throw the dang burgers under the oven broiler.

    Rib Contest

I've never done one myself so take this with a grain of salt, however what I have always seen is: Ribs nicely sliced and laid on a bunch of curly parsley (stems tucked in/under) to make a nice little bed for the ribs to lay on. That's about all the advice I can offer. Good luck, and hopefully...

Hope it works out for you and it doesn't take weeks on end to get a replacement.

This video hack is a game changer

Not bad. Made me say "Duh! Why didn't I think of that!" I usually use freezer paper but depending on what I am freezing I'll have to give it a shot! Thanks for sharing!

Nice neighbor indeed! Good luck with the smoke, let us know how it goes!

I feel your pain. Instead of driving 30 miles for an exchange there is a gas station 10 miles away that will refill. It used to be great, go in, pay, fill and go home. But now every time I go in, there is nobody there that can refill my tank. So I end up having to pay for the fill and leave my...
