Well, it was my wife's birthday last week and she wanted smoked salmon so I was going to try Disco's Fancy Shmancy version. Well, I ended up getting the flu or some awful crap the day before so all I could manage was to fillet the one belly side and pin it with a small skewer (no butchers string...
I had to look up the Assasin 24 to check it out. Cool looking unit! My advice won't really apply but one thing I noticed with smoking ribs without any foil is if you're like me and use a lot of wood for fuel, you have to be careful and keep that smoke thin. Otherwise, 6 hours later you can end...
Congrats on the nice new unit! I would agree that any time a new toy can be had without argument is a good deal!
I'm sort of with Al. The smokers are all my job, but my wife knows her way around the gas grill! Not sure if she'll ever get into the smokers but time will tell.

That's about all the advice I can offer. Good luck, and hopefully...
Not bad. Made me say "Duh! Why didn't I think of that!" I usually use freezer paper but depending on what I am freezing I'll have to give it a shot!
Thanks for sharing!
I feel your pain. Instead of driving 30 miles for an exchange there is a gas station 10 miles away that will refill. It used to be great, go in, pay, fill and go home. But now every time I go in, there is nobody there that can refill my tank. So I end up having to pay for the fill and leave my...
