Type of wood
NEWBIE ALERT!!!! So my buddy heard i got an offset smoker and wanted to be nice and drop me off about 50 logs of this type of wood. He said he thinks is oak? What do you guys think.- Dirtfishingman

Can you use fresh wood?
Newbie im just getting started and had an electric before my off set i have now. I have always used store chips or chungs. I have a client that gave me a few logs from his apple tree. When you say green wood what do u guys mean?- Dirtfishingman

Probe replacement?

NEW FROM INDIANA
Hey guys, Im new here from Indiana. Big time griller but mainly gas. Wifey knew i wanted a smoker and she surprised me and she got me one.
