I'd just rip it off and maybe hit it with a Bernzomatic Propane of Mapgas torch. It should take any of the moss right off so you just get the flavor and aroma of the wood.
That's the way I generally treat most matters and move in life...it's good to be creative and be able to blend whatever you have together to get something you like.
If you want some recipes from over this way, fire me up....I'll tell you what I know.
Curious to see the outcome. I live in Greece, so Loukaniko is a staple and there are many different styles.
Another one that is very good is air dried salami. In Greek, it's Salami Aeros.

I know they are a pain. I have some on my little lifting dolly...one holds air perfect and the other constantly deflates.
My problem is having to roll the smoker around the yard on dirt, grass and uneven terrain. Regular castors may have a tendency to dig in and not roll so well.
Got one of the thermometer holes drilled and a piece internally threaded pipe tacked on to accept the thermometer threads.
I even got it lined up a the 12 o'clock position just right. I'm using Taylor Weekend Warrior gauges at the moment. Anyone else have these? I've seen pretty accurate...
Nice work so far. I'm digging it. I have some old Belle Maries that are for buffet serving that could easily be converted to smokers. Uh oh, I think I just incriminated myself for a future project!!!

Burned out the rust, crud and metal coatings last night. The draft seems to be very prominent from the firebox the the main chamber. You could really tell that the flames were pulling left through the main chamber and away from the firebox, which means there was a good draft.
