    Southwest Chuckie w/o Qview

Sad to say it something I bought. It is made by Bruce Foods (Cajun Injector) and easily available here in Austin at Randall's supermarket and Academy Sports. I may try to make my own as soon as the jar is empty.

Do You Keep Records of your smokes ?

Old School: I use 3X5 index cards in a recipe box I've had forever. When I make changes, or have an idea to try next time, I attach a little post-it note. I like to have the recipe right in front of me and not mess with the computer or print it out every time.

    Southwest Chuckie w/o Qview

I have to say there is no Qview with my Southwest Chuckie, but this is how it went: Injected the night before the smoke with Jalepeno Butter injection. Wrapped in Saran Wrap, then into a storage bag and into the frig. Rubbed with 1 packet taco seasoning, plus extra cumin, and let it sit...

Should I slice or pull my first chuckie?

Let us know how it works.

Should I slice or pull my first chuckie?

I go with pull. I go to 160, foil and take it to 200. Then I add more foil, wrap it in towels, and put it in the cooler for an hour or more. I'm doing one today. I injected yesterday with jalepeno butter injection, and I'll season today with taco seasonings, plus a little extra cumin. After...

    Homemade Tortilla Chips anyone?

I make them all the time. Like the others said, drop into hot oil. It's hot enough if the chip rises. I've also fried them in a large skillet with about 1/2 inch of oil. Seasoning of choice. I usually use just plain salt or with a little garlic powder.

When do you put water in water pan ??

I always use a mix of apple juice and water. With chuckies, I use beef broth and onions.
