    Cold Smoked Cheese On A Hot Summer Day

    I smoked a few blocks last week with my soldering iron tin can method, temps got up a little over 100* so when one block started sagging pretty good through the grate after 4 hours i grabbed everything out and stuck them in the freezer for an hour then back in the smoker for a couple more hours...

    It just never hit me about the temps cause like i said i usually dont do alot of cold smoking in the summer, its always in the colder months and i dont have to worry about it, but lesson learned. A jug of ice or deflector will be used next time. I know your suppose to let it sit for 2 weeks but...

    Thanks everyone. You know everytime I go to slice up a batch of bacon it reminds me of that episode of Seinfeld where Cramer and Newman are in jerry's. Apartment making all that meat. Cause my kitchen ends up with bacon and equipment everywhere!
