    I try to keep the temp around 230 and I check the internal temp after 4 hrs. This time they took about 5 1/2 hrs to get done.

    HI I'm Jeff work in Law Enforcement I live in Western North Carolina love to grill and smoke I use a smoke hollow 4 and 1 grill and I'm in the process of building a new smoker. Today I smoked one butt and four racks of baby backs. Here is some pics and I will post some when they are done
