    Makes sense. Thanks for the info. As stated above my cheese turned out really good. The relatives and neighbor loved it along with myself. My next plan is to build an actual smoke house. Idk if my funds I saved are gonna allow that as I have a few other projects I need to get done. We will see tho.

    Thanks for the info. I am still learning the different things like cheese. I am going to build a dedicated smoke house this spring to start curing bacons and stuff in. So doing cheeses and other things cold smoked will be easier for me soon. lol

    Awesome yes let it mellow. 2 weeks is what I found most people do. Mine turned out great and I mellowed 2 weeks. I need to do pepper jack next time.

    Thanks and yes we do I mean if it’s gonna be cold it might as well snow. There is some in the forecast for later today so we will see but looking at the forecast it will be gone Tuesday. Supposed to be in the 40’s last I seen.

    Thanks I am the same way. It’s just like Mac n cheese smoked is a game changer. I was just gonna put it in crockpot. I decided hey I don’t have to be outside all day and I wouldn’t need the full time and attention as meat so I figured y not.

    Also I would like to try waxing the cheese to let it age but I don’t have a basement for aging. I seen people turn refrigerators into something to age cheese in. Might look into that someday idk.

    Sounds great thanks for the info and thanks for the compliment. I certainly didn’t have low flowing smoke to get stagnant. I understand how that could make bad cheese tho. Can’t wait for 2 weeks to be up to see how it turned out. It smelled great lastnight when I loosely wrapped in plastic wrap.
