    I'd appreciate that!

New - Oklahoma Joe's Highland Smoker

Looks great!  If I'd make any suggestions it would be to open up the inlet to the cook chamber more. It's kinda closed off and you're looking for better heat flow. If I asked your buddy to make me one of those diffuser plates, what would he charge me shipped to So Cal??

Smoker firebox rust inside and out

There's nothing wrong with POR-15. It's just not made for a high-heat environment, nor is it suitable to apply to a surface with food in it. For outside, like was posted, just get a couple cans of a high-temp paint. Exhaust manifold paint (like VHT's product lineup), brake caliper paint (if you...

Smoker firebox rust inside and out

Do not use POR-15 on any part of your smoker.

    Brinkmann Trailmaster Vertical Smoker

I urge you to leave the exhaust stack wide open, and control pit temps at the firebox. A closed exhaust will promote creosote buildup -- and bitter product.

Weber VS. 55 Gal. drum ?

Q: What's your budget? Q: Do you have access to free/cheap cooking wood like oak, apple, hickory, pecan, citrus, etc? Q: How actively do you want to manage your pit, i.e. monitoring fuel, pit temps, etc -- or do you want a "set-it-and-forget-it" type unit? Q: How much room do you have to park...

Risking DEATH! Weber Smokey Mountain 14.5

Well, the brisket is gone. Took almost 6 hours on the One-Touch. Had a great smoke ring, very moist, however my wife (the brisket specialist) said that I only got a 6 out of 10 for tenderness. I think that's fair. I kinda bounced around with the temps a little bit... still learning the ins and...

Risking DEATH! Weber Smokey Mountain 14.5

After doing a whole pile of smokes on the TMLE, it's really cool to be able to smoke a smaller piece of protein at a fraction of the fuel cost. Oh... and by the way... KILL SC!!

Got the brisket on. It's a 3lb flat, but it's about 3" thick, so I'm looking for a nice couple of fat layers through it.

Risking DEATH! Weber Smokey Mountain 14.5

Target had most of their BBQ stuff on sale and/or clearance today, so I picked up an 18.5" Weber 'One-Touch Silver" on sale for $52. That's $8 cheaper than their current pricing for the ground hugging 18.5" Smokey Joe. I also picked up a matching hinged cooking grate on sale for $9 to go with...

I will be hitting our local Target tomorrow as well. Since I've been pretty successful even on my tryout cooks on my TMLE, my wife is on board with anything I want/need to do regarding BBQ equipment, supplies, etc. I "prime the pump" with little hints about how I'm ready to "do another smoke"...
