I cook a lot of lamb chops, and because of the amount of fat, they can lead to some nasty flare-ups (especially if the collection part of my grill is dirty as it has actually even caught the fat on fire once or twice now). I might buy a section as a trial on my weber summit. if they work i'll...
cured/smoked pork belly is bacon.
smoked pork belly is.... smoked pork belly.
cured pork belly is.... cured pork belly.
all three are awesome,
crispy pork belly is one of the best things I've ever had. done right, its silky and rich and wonderful. done not as well its too heavy and the...
brisket and baby back ribs, with some beans. wife is making a big greek salad, pasta salad, potato salad, and a fruit bowl. have quite a few people coming over the fourth for my city's big fireworks celebration, you can watch it from the house. drinks flowing, good eats, good friends, lots of...
might give these a whirl. just got 40lbs of cookin pellets blend though. might be willing to buy a 40lb of hickory, as I use it more than any other. I put them in totes in the garage.
tony packo's bbq sauce is actually really good. didn't have time to make my own and Meijer had some on clearance for 2.00 for a jar. excellent (especially for the price).
liked their hot dogs, had some true smoke flavor to them (kind of a hybrid between kielbasa and normal everyday hotdogs) but...
looks like a nice machine, can't beat the price! Not familiar with bizerba, but it looks well made. still licking the wounds of my mother selling my BIG globe meat slicer from an old kowalski store my great uncle used to manage/own in Detroit. The thing weighed a ton, and when I was away in...
Costco actually finally had two full briskets in cryo, for 3.99 or 3.98/lb. though they did look a little scrawny.... I may swing by again Tuesday and pick one up. usually they only carried trimmed flats, and they were like 8.** per pound.
man, those burnt ends look yummy.
I put on one with an adjustable needle valve from amazon. And it has a longer hose.
will let you adjust from the smallest flame that you have to worry about the wind to an inferno.
sadly that would be on the lower side of retail here for brisket. now I have access to a wholesaler though, so I should be able to get them for decent prices now (though I haven't looked since I have had access).
I grill a lot of cabbage, but usually cut it into slices and salt/pepper/olive oil them. I would have hated it as a kid, but I love it now. I've grown to love cabbage, though being irish and polish I doubt I really ever had a choice.
this is for the masterbuilt xl propane smoker... if you converted it electric and put a rotisserie in it, I'd be interested in seeing it.
I did think about putting a controller plus a heating element in it that is removable just to have the option and possibly get more consistent lower temps. I...
congrats Dave! Some fellow Michigander posted some baked beans that he smoked... I happen to have two big cans of bush's baked beans kicking around. I figure some hot sauce and some smoke may just take em up a notch or two.
so far:
brisket (picking up this morning from restaurant depot)
some...
