    To many hardcore offset guys this is a crutch and a sin. Others happily add water boxes or even setups that allow a very slow steady drip onto the dampner/baffle in order to make steam, its really a matter of personal preference

    in my experience all oaks are fine for heat but pretty weak on the flavor side, if you like a slight smoke taste its great otherwise add fruit woods or hickory for more smokey flavor. Lots of guys like mulberry but I have never ran into it to try. Someone should come along that has used it.

    welcome to the SMF, I use the taylor didis and have not had any problems with the silicon coated probe other than it gets cut easier than a steel braided probe but the steel braided can kink and get weird so its a double edged sword.
